Silvaner from the Muschelkalk — the ancient seabed limestone that defines this corner of Franconia. One night on the skins, just long enough to pick up texture and a whisper of grip without losing the nervy brightness the grape does so well.
Then something a little less planned. One barrel was left untopped. Over time, a veil of flor settled across the surface — the same wild yeast that shapes fino sherry, delicate and saline, living off what was left behind. We didn’t chase it away. Instead, we pulled 10% of that barrel into the final blend, a small addition that bends the wine somewhere unexpected: a little more alive, a little more strange, like a familiar melody played slightly out of tune.
The rest is restraint. Spontaneous fermentation, minimal intervention, bottled when it was ready.
What you get is limestone-bright Silvaner with a hidden layer — something funky and almost oceanic underneath the fruit. The flor doesn’t announce itself. It just lingers.
