Domina. A grape that doesn’t hold back — deep pigment, dark fruit, a natural intensity that fills the glass before you’ve even brought it to your nose.

Carbonic maceration for a few days: whole clusters, sealed, left to ferment from the inside out. The technique pulls colour and fruit without extracting harshness. What came out was almost shockingly dark — aronia, blueberries, something almost brooding in the glass — but fresh, with a balanced acidity and tannins that sit easy. Light on its feet. The kind of wine that moves fast.

Serve it cold. Really cold. And if you want to go further: a whiskey glass, one ice cube, wine poured straight over. There are no rules here. The wine can take it. More importantly, so can you.

The name is both instruction and philosophy. If You Care. Share. — for the street, for the neighbours, for a hot afternoon that turns into an evening nobody planned. The ’22 said She Is Rare. Handle Her With Care. The Domina vintages are building something: a series of small statements about how wine moves between people, and what it means when it does.

Then it stopped. The vineyard is gone — given up because the landowner’s idea of a fair lease price hasn’t moved since the 1980s. The parcel was planted by my father in 1989, which counts for something. It just didn’t count for enough. Honestly, it was never my favourite vineyard. But it made good wine, and this is the last of it.
